Watermelon halloumi salda
I was sitting in Bakery Gourmet Kafanei when a waitress came up to me and began to speak in Latvian. As it turns out, she has lived in Limassol for 7 years and the café belongs to her sister-in-law. After catching up on some Latvian gossip, she found out that I had come to Limassol to visit a halloumi factory. This recipe is her family’s summer favorite.
400 g sweet, cold, peeled watermelon pieces
200 g halloumi cheese, pieces
8 tbsp Oleastro extra virgin olive oil
handfull peppermint leaves
freshly ground black pepper
Place watermelon pieces in a wide bowl. Then add halloumi and peppermint. Pour over olive oil and sprinkle with some pepper. Serve cold right away.
