Halloumi with honey
While in Cyprus, I met George and Mahsa and when I asked them what is their favourite way to make halloumi, this was it. With honey.
250 g halloumi cheese, cut into 5mm slices
4 tbsp honey
3 tbsp grape seed oil
3 tbsp Oleastro extra virgin olive oil
1/4 tsp dried oregano
handful of peppermint leaves
Heat the oven to 200°. In a baking dish, arrange the slices of halloumi and top with honey and grape seed oil. Put into a hot oven and bake for 10 – 15 minutes until the cheese gets soft. Take out of the oven, drizzle with extra virgin olive oil, and sprinkle peppermint and oregano on top. Serve immediately.
