Late season potato salad

It is as simple as simple can be, but honestly this is a win-win salad because the salad just makes everyone want it (even if there are other things that sometimes people tend to not like). Late season means for the end of summer when you have potato harvest time, but you still want some salad and it is already getting cold.

Ingredients

500 g small potatoes
40 g capers
240 g canned cannellini beans (liquid removed)
50 g sun dried tomatoes in olive oil, cut into strips
60 g pitted dark olives
50 g pickled cucumbers
20 ml extra virgin olive oil
sea salt to taste
freshly ground pepper to taste
handful of small basil leaves

Prepare

Steam or boil the potatoes until they are ready. Drain and cool.

Transfer the potatoes to a mixing bowl, add the remaining ingredients, and mix. Serve.
