Grilled halloumi with cucumbers
A pretty straight forward dish that is made throughout Cyprus. All you need is great halloumi (I love a goat variety for this recipe) and crunchy cucumbers. And of course – olive oil, since Cypriots pour olive oil over everything and a lot of it.
250 g whole halloumi
200 g peeled crispy cucumbers, cubed
handful of basil leaves
handful of peppermint leaves
4 tbsp extra virgin olive oil
freshly ground black pepper
Heat grill pan or grill. Place whole halloumi on a grill/pan and grill until golden brown on all sides. Take it off, cut into slices, and place on a plate. Sprinkle with cucumbers, basil, and peppermint, pour over some olive oil and sprinkle with pepper. Serve right away.
