So simple, yet so, so tasty. Something that tells me that summer is here and winter is finally gone. Something that is so juicy that the only thing you need is a good glass of white wine and great company. Plus – a picnic.

Ingredients

8 corn tortillas
8 medium pickled cucumbers, thinly sliced
8 sun dried tomatoes in oil, cut into small pieces
200 g romaine lettuce, shredded
200 g baked chicken or grilled beef, thinly sliced
jalapenos, as much as you want

for the cream:
330 g drained canned corn + 40 ml of the liquid
2 medium size soft avocados
1 garlic clove, finely chopped
20 ml mild extra virgin olive oil
sea salt to taste
freshly ground pepper to taste

Prepare

Blend all the cream ingredients together, so that there are still some chunks left.

Spread a layer of cream on each tortilla and sprinkle with tomato, cucumber, salad, and meat. Top some with jalapenos, if using, and roll up tightly. Let stand for 1 hour.
