Blackcurrant, lavender and white chocolate muffins
The combination of lavender, blackcurrants, and white chocolate (plus lemon zest) – this is what makes these muffins so, so special. And I like to think that thanks to no sugar added (just honey) and wholegrain flour, they are a bit healthier (well, you have to enjoy every bite of something delicious!).

300 g wholegrain wheat flour, medium grind
1 tsp lavender flowers, lightly crushed in a mortar and pestle
zest of 1.5 lemons, finely grated
1/2 tsp baking soda
pinch of sea salt
250 ml milk
200 g butter
250 g honey
1 tbsp vanilla extract
150 g blackcurrants
200 g white chocolate in pieces
300 g mascarpone
2 tbsp honey
200 g whipping cream

Preheat the oven to 200°. Line the muffin tin with muffin papers. Melt butter with honey on a very low heat until it is meltedand then cool it a bit.
Beat the eggs with a fork in a bowl. Add the milk, vanilla, and butter and mix. In a separate bowl, add flours, salt, baking soda, baking powder, lavender, lemon zest, and orange zest and mix. Gradually add the dry ingredients to the moist ingredients and mix just until incorporated – don’t over mix. Add the chocolate, currants, and mix.
Fill the muffins 2/3 full. Place in the centre of the oven and bake for 20 -23 minutes, until a toothpick inserted in the middle comes out clean. When done, remove and cool 5 minutes in the pan. Transfer to a cooling rack. Cool completely.
For the cream. Place mascarpone in a bowl with honey and whisk on a slow speed until it starts to loosen (just about 20 seconds). Than add half of the cream and incorporate until it is creamy. Add the rest of the cream and incorporate. Turn on a higher speed and whisk until it is firm, but still soft. Spread on the muffins and decorate with flowers.
